Polish bezy: crisp meringue cookies
Bezy (singular: beza) is the Polish name for meringues: light, crisp cookies made from whipped egg whites and fine sugar, baked slowly so they stay airy inside. Ours are made at our family bakery in Elk Grove Village, Illinois.
